Vegan Mediterranean Bowl

Ingredients
Quinoa
Cucumber
Grape Tomatoes
Arugula
Kalamata Olives
Cooked Beets
Falafel
Red Onion
Hummus
Balsamic Glaze
Vegan feta cheese (Optional)
Method
Cook quinoa according to package
Wash and prep all veggies
Make a bed of arugula in a salad bowl
Add assorted veggies, quinoa, and hummus to the bowl
Drizzle bowl with balsamic reduction
Enjoy!
I love prepping this at the beginning of the week because it's the perfect meal to bring to work or school.
