Vegan Mediterranean Bowl

Ingredients

  • Quinoa

  • Cucumber

  • Grape Tomatoes

  • Arugula

  • Kalamata Olives

  • Cooked Beets

  • Falafel

  • Red Onion

  • Hummus

  • Balsamic Glaze

  • Vegan feta cheese (Optional)


Method

  1. Cook quinoa according to package

  2. Wash and prep all veggies

  3. Make a bed of arugula in a salad bowl

  4. Add assorted veggies, quinoa, and hummus to the bowl

  5. Drizzle bowl with balsamic reduction

  6. Enjoy!

I love prepping this at the beginning of the week because it's the perfect meal to bring to work or school.
